Coal Fired Flatbread Sandwich


One of the lovely chefs at my job made me a special non traditional veggie sandwich. Using flatbread which they make the dough in house and baking it in a coal-fired oven.  Filling it with organic spinach, mushrooms, tomatoes, coal-fired sweet bell peppers and a generous amount of mozzarella and finishing it off with chopped parsley.  It was indeed a rather delicious lunch.
