Spinach Pesto Linguine
I can eat this dish almost everyday if I had a limitless supply of organic spinach at my house. I used the homemade raw organic spinach walnut pesto that I posted about earlier (http://thedirtandthesea.blogspot.com/2012/02/homemade-raw-organic-spinach-walnut.html). Using whole wheat linguine and adding some sundried tomatoes, flaxseeds for some omega-3s fatty acids that support bone health, some crushed almonds for a nice crunchy texture, shaved Parmigiano-Reggiano, and a drizzle of balsamic fig glaze and extra virgin olive oil.
