Pecorino Cheese Truffled Tapas



Having a tapas night dinner is always a fun way to enjoy and explore the different flavors of food and culture.  This time it was an at home tapas dinner and by the looks of this picture I promise you it tasted as promising as it looked.  What we have here is a slice of garlic toasted french baquette, topped with a mustard balsamic spread, and a combo of aged Pecorino cheese and Pecorino with truffles cheese.  The truffle flavor explodes in your mouth and it is absolutely delicious.  It was a real rare treat and one that I recommend you trying if you ever have a chance to try it, you should!  Then I took some arugula and tossed it in a light dressing of extra virgin olive oil, balsamic vinegar and cracked whole peppercorn.  Very delicately placed it atop the duo of Pecorinos and just for presentation purpose drizzled the plate with some balsamic fig glaze.  AND adding a sliced strawberry couldn't hurt either.  From its popularity I repeated this task a few more times that night with no complaints.




Here's a look at some of the other cheeses and toppings we had to choose from that night.  From top left to right their were caramelized walnuts, fig jam and whole figs.  Then for the cheese options from left to right was a cows cheese, a goats cheese, and the last two were sheep cheeses.  Aged Pecorino and the Pecorino with truffles at the end.  If I would have known how good the Pecorino with truffles would have tasted I probably would have gotten the largest amount that they would have allowed me to buy at the wine and cheese store. Yes it was that good!
