Jasmine Coconut Curry Avocado Roll with Asian Habanero Chilli Sauce


I was craving some Avocado sushi rolls but not being satisfied with the general ones that you can order or buy from your local supermarkets or sushi restaurants I decided to dress mine up a bit.  Having some fancy Jasmine Coconut Curry Rice that I purchased previously from my local farmers market it seemed like a marriage made in heaven.  The combination of the sweet roll with the spicy sauce just satisfied my sushi craving.

Recipe:
Jasmine Coconut Curry Rice (see recipe)
Avocado slices
Nori (Seaweed)
Asian Habanero Chili Sauce (see recipe)
Wax Paper

Jasmine Coconut Curry Rice Recipe:
Jasmine Rice
Curry Powder
Coconut Flakes
Coconut Water
Rice Wine Vinegar

Asian Habanero Chili Sauce:
2 Habanero Chili's
2 Red Bell Pepper
1 Yellow Bell Pepper
Apple Cider Vinegar
1/4 Cup of Honey
Sesame Oil
Low Sodium Soy Sauce
1 Tbsp. Grated Ginger


  1. Start with the chili sauce because it will take the longest to make.  First cut up the Bell Peppers and the Habanero Chilis and make sure you remove the seeds from both of them.  Fill a pot with apple cider vinegar enough to cover the peppers and cook on medium heat for 20 minutes or until they are tender.  Drain the vinegar out and move the peppers to a blender and mix well.  Once done mixing put the blended peppers back on the stove top on a simmer and add 1/4 cup of honey.  Cover the pot but stir occasionally every few minutes for a duration of 40 minutes.  Let the sauce cool and place in the fridge until it is cold.  Then you can add the sesame oil, soy sauce and grated ginger and let it sit in room temperature until ready to serve.
  2. If you do not have the fancy rice that I purchased at the farmers market no fret you can make it fancy.  In a rice cooker you can add 1/2 cup of Jasmine Rice with 1 teaspoon of curry powder, 2 teaspoons of coconut flakes and 1/2 cup of Coconut Water.  Turn on the rice cooker and let it do its majic! Once the rice is ready let it cool and then you can add 2 teaspoons of rice wine vinegar.
  3. Now to Assemble the Roll.  Place the dull side or NON shiny side of the nori wrap on wax paper, spread the rice evenly on the wrap paper and in the middle add your avocado slices.  Roll it as well as you can by folding and tucking just like a mini burrito with either your hands or with some sort of flexible hard surface such as a bamboo mat.  Cut it into desired roll length and enjoy.
