On a Saturday afternoon after returning home from the local farmers market with a car full of fruits, veggies, grains and a brand new lab/boxer puppy mix I got inspired and decided to celebrate with a homemade Fried Green Tomato Sandwich. All vegetarian and not lacking any texture or flavor, again with a couple glasses of red, either a Cab or Malbec will make you content rubbing your tummy just like Pooh Bear after hes done eating a bowl of honey.

Fried Green Tomato (see recipe)
Purple Kale Leaves (or any crunchy green leaf will suffice such as Arugula or Iceberg Lettuce)
Avocado slices
Cheesy Spinach Artichoke Dip (see recipe)
Spicy Brown Mustard
Multi Grain Bread
Fried Green Tomato Recipe:
Fried Green Tomato
Whole Wheat Flour
Almond Milk
Cornmeal
Cayenne Pepper
Garlic Powder
Onion Powder
Canola Oil
Cheesy Spinach Artichoke Dip:
2 Cups of Spinach
1/2 Cup of Canned Artichoke Hearts
1/3 Cup of Goat Cheese Crumbled
1/3 Cup of Parmesan Cheese Grated
1/3 Cup of Mozzarella Cheese Sliced

- First step in construction this beauty is you should cut the green tomato into about 1/2 inch slices and sprinkle with just a dash of salt and let it sit for 5 minutes so that the salt soaks up the excess moisture allowing for a firm tomato slice. In three separate bowls arrange the whole wheat flour, almond milk, and cornmeal with mentioned/desired spices and in the same order listed dip/cover the slices into each mixture. Then on a medium to high heat pan add the canola oil and let the breaded tomato slices cook on each side for about 7 minutes. Place on a paper towel to cool off.
- For the dip first boil 2 cups of spinach for 5 minutes then drain of the water. Then add 1/2 cup of drained artichoke hearts into a pot with the boiled spinach and the rest of the cheeses and spice ingredients. Bring it to a medium/high heat then let it simmer covered for 10 minutes stirring occasionally.
- Lightly toast your bread, and layer on the spicy mustard with the cheesy spinach artichoke dip, avocado slices, fried green tomato and purple kale leaves. AND if you're like me you can throw in extra cheese somewhere in there. :)
