4Cheese Tomato Slider
I got inspiration to do this recipe from a caprese salad but as you can see I took that concept and did a complete 360 with it. I had some coal fired rolls that I picked up from Russo's Coal Fired Italian Kitchen and was in the mood to put them to good use. This is a good dish to prep a day ahead because what you put into the slider tastes better cold and when time has allowed for all the ingredients to marry well together. This is a rather simple slider to put together its just getting all the ingredients. I used two cows cheeses (Parmigiano-Reggiano and sliced Gouda), one goat cheese (Midnight Moon), and one sheep's cheese (Pecorino aged). Ultimately you can use whatever cheeses you want but I wanted to be creative and use the mix of cow, goat and sheep cheeses into the slider. But I would definately use grated Parmigiano-Reggiano into the tomato mix. Which I will explain in the recipe instructions.
Recipe:
Small Buns or Slider Rolls
Grated Parmigiano-Reggiano
3 different cheeses
Tomato
Sundried Tomatoes
Boiled Spinach
Chopped Parsley
Flaxseeds
Balsamic Vinegar
Lemon Juice
Garlic Powder
Onion Powder
Cayenne Pepper
Pepper
Hummus (optional)
First start off with slicing the tomato into decent amount size chunks. Then in a bowl mix in the tomato, sundried tomatoes, grated Parmigiano-Reggiano, chopped parsley, flaxseeds, lemon juice, garlic powder, onion powder, cayenne pepper, pepper and add the boiled spinach once it is drained of any excess liquid and has cooled off. You can either start assembling the slider now or let it sit in the fridge for a couple of hours or overnight.
Now to assemble the slider just get your roll and add a decent amount of balsamic vinegar to both sides of the bread. Spread the hummus (optional), add the 3 different types of cheese that you have decided to add and just top it off with a big spoonful of the tomato mix that you made earlier.
One slider wasn't sufficient for me so I would recommend to make atleast two, pour a nice glass of red and RELAX. Hope you enjoy! :)
