Homemade Veggie Burger Wrap



The hardest part of this recipe is making the veggie burger and that isn't even that difficult. Its a very filling meal but one that doesn't weigh you down and doesn't make you feel gross.  Its full of protein and NO cholesterol.  So theres a double whammy for ya!

Shredded Carrots
Sundried Tomatoes
Lettuce leaf
Homemade Balsamic Mustard Spread

Veggie Burger Recipe:
Beans of your choice
Sweet Potato
Bell Peppers (green, yellow or red)
Oats
Extra Virgin Olive Oil
Garlic Powder
Onion Powder
Cayenne Pepper
Pepper

First, cut the bell peppers into rather small pieces and saute them in extra virgin olive oil with garlic powder, onion powder, cayenne pepper and pepper.  Once they are cooked down and softened add the beans of your choice and boil it in some water to soften them up as well.  Cook the beans until all the water has evaporated.  In a seperate pan boil the sweet potato until it is tender enough to mash.  Once you add the mashed sweet potato into the bean mixture then you can add the instant oats and cover for a few minutes on low heat to allow everything to cook and bind well together.

Take your bean mixture and let it cool before you form them into patties.  Once you have formed the patties then cover them up and place them in the fridge for about an hour to allow them to firm up so it is easier to cook on a grill or a flat pan on your stove top.

Now, its just time to cook your veggie patties in some extra virgin olive oil to get it a little bit crispy and to add some heat so they are not cold veggie patties.  Once you have finished frying them, then it is time to assemble.  Take a large lettuce leaf and top it off with the patty, spinach pesto, sundried tomatoes and shredded carrots.  For the homemade balsamic mustard spread all you need to do is add equal parts of balsamic vinegar and mustard and whisk well together.  Add some of that spread and you are all done and ready to devour this healthy vegan protein packed meal.  I also added a side of some thin sliced cucumber and avocado salad drizzeled in balsamic vinegar and cracked pepper.  Enjoy! :)
