Vegan Lunch



After a crossfit workout this morning my body was craving some extremely healthy food.  So I looked in my pantry and fridge and put this quick and easy lunch together.

Shaved Carrots
Canned Garbanzo Beans (no added salt)
Raw Spinach Pesto
Raw Garden Vegetable Cracker


For the raw spinach pesto I threw in spinach, walnuts, extra virgin olive oil, balsamic vinegar, cayenne pepper, cracked peppercorn, garlic powder and onion powder into a blender and pressed mix.



And for an added crunch this excellent find from Whole Foods topped off this vegan lunch.  When eating each meal it is best to eat with color, not just for presentation purposes but for nutritional and health benefits.


Pineapple coconut water...yes you read it right.  Great for the summertime!
