Sweet Plantains



Some really cool chefs I know whipped this up for me the other day.  And having skipped breakfast let me tell you how delicious it tasted.  Baked in an oven they topped off the sweet plantain with feta cheese and Parmigiano-Reggiano.  Ive had maduros before but never thought about adding cheese to it.  This is a must try!
