Raw Arugula Salad




You want a delicious and healthy meal, well here it is.  Once again I just threw this together with whatever ingredients I had in the fridge.  On a bed of peppery organic arugula I placed sliced carrot noodles, raw and vegan hearty homemade spinach dressing, diced tomatoes and then drizzled with aged balsamic vinegar.

For the spinach dressing all you need is a blender, spinach, olive oil, balsamic vinegar, pepper, garlic powder, onion powder and cayenne powder.  If you want to make the dressing a little more interesting then you can substitute the olive oil for another oil.  Such as sesame or walnut oil.
